Breakfast Burrito With Eggs, Sausages, Bell Peppers, Onions, Cheese, and Salsa

This is my take on a breakfast burrito with scrambled eggs, breakfast sausages, chopped and stir-fried bell peppers and onions, melted Mexican 4-cheese blend, and medium-hot salsa.

Ingredients

The ingredient amounts all depend on the amount of breakfast burritos that you are cooking.

Scrambled Eggs

  • 5 Eggs
  • Milk

Breakfast Sausages

  • 4 Breakfast Sausage Patties

Onions and Peppers

  • 3 Bell Peppers
    • 1 Green Bell Pepper
    • 1 Red Bell Pepper
    • 1 Yellow Bell Pepper
  • 1 Large Onion

Tortillas

  • Mexican Soft Flower Tortillas

Seasoning

  • Garlic Powder
  • Olive oil
  • Parsley Flakes
  • Salt

Toppings

  • Mexican 4-Cheese Blend (Shredded Cheese)
  • Salsa
Recipe

Eggs

  1. Crack 5 eggs and pour them into a bowl.
  2. Beat the eggs with a whisk until the egg white was evenly mixed with the yolk.
    • If the eggs are not evenly mixed, the scrambled eggs will be spotted with egg whites.
  3. Add milk to the egg mix and cook the scrambled eggs by stirring the cooked parts towards the center repeatedly on medium-low heat.
  4. Add parsley flakes as you cook the scrambled eggs.
    • You can add any variety of your choice seasoning at this point.
    • My preference is salt and garlic powder.

Breakfast Sausages

  1. Cook 4 breakfast sausage patties on medium-low heat.
    • You can use any choice meats, such as small pieces or strips of chicken for example.
  2. Cut the sausage patties into small pieces using a spatula and a wooden spoon.

Onions and Peppers

  1. Stir-fry onions and green, red, and yellow bell peppers in a small pan on medium-low heat.

Tortillas

  1. Put a small amount of olive oil in a small pan, on low heat.
  2. Cover a Mexican soft flower tortilla with the olive oil on both sides.
  3. Put the Mexican 4-cheese blend on one side and scrambled eggs and breakfast sausage pieces, stir-fried bell peppers, and onions on the other half of the tortilla.
  4. Let the shredded cheese melt just a little bit.

Salsa

  1. Put the salsa on the side and add it to the breakfast burrito(s) as needed.
Directions

I cracked 5 eggs and poured them into a bowl.

I beat the eggs with a whisk until the egg white was evenly mixed with the yolk. If the eggs are not evenly mixed, the scrambled eggs will be spotted with egg whites.

I added milk to the egg mix and cooked the scrambled eggs by stirring the cooked parts towards the center repeatedly on medium-low heat.

I added parsley flakes as I was cooking the scrambled eggs. You can add any variety of your choice seasoning at this point. My preference is salt and garlic powder.

I cooked 4 breakfast sausage patties on medium-low heat. You can use any choice meats, such as small pieces or strips of chicken for example.

I cut the sausage patties into small pieces using a spatula and a wooden spoon.

I stir-fried onions and green, red, and yellow bell peppers in a small pan on medium-low heat.

I put a small amount of olive oil in a small pan, on low heat, and covered a Mexican soft flower tortilla with the olive oil on both sides. I put the Mexican 4-cheese blend on one side and scrambled eggs, breakfast sausage pieces, and stir-fried bell peppers, and onions on the other half.

I let the shredded cheese melt just a little bit.

I prefer to have the salsa on the side so that I can add to the breakfast burrito as I eat it. This way I won't add too much salsa to overwhelm the flavors of the breakfast burrito.

I kept the extra portions in case I want to cook another tortilla or save them for the next day.

This is a very delicious breakfast. In hindsight, I would have put less ingredient portions into each burrito to make it easier to fold the burrito.

I mixed the mashed potatoes until there are no lumps, while adding salt in the process. I didn't add any extra seasoning, since I was going to add brown gravy, but feel free to add any seasoning you want at this point.

The Truth About Entrepreneurship

Some marketers promote a vision of entrepreneurship where new entrepreneurs create their own work hours, take vacations when they want, go through business adventures, find easy success, and get rich quick. Today, entrepreneurship is seen as something "cool". That wasn't always the case in my early 20s; it was sometimes seen as a counterculture.

The truth about entrepreneurship is that building a business is hard work. There are more work hours in starting and building a business than working a full time job. For this reason, that is why I chose my dream and passion for building a business — multimedia entertainment. If your business is something that you are passionate about, it can help you get through the challenges of life and running a business, and through the difficult days.

The truth about entrepreneurship is that finding success takes time, so you have to be patient. Success, however way you define it, is part of the journey and not just a destination. Once you accomplish your tasks, goals, and milestones, you have to set even higher ones. Success is not overnight, and as they say, "Rome was not built in a day". Keep putting one foot in front of the other because "a journey of a thousand miles begins with one step".

In 2018, the US Small Business Administration's Office of Advocacy released the 2018 Small Business Profile showing some interesting statistics:

  • Employment
    • United States small businesses employed 58.9 million people, or 47.5% of the private workforce, in 2015.
    • Firms with fewer than 100 employees have the largest share of small business employment.
    • Small businesses created 1.9 million net jobs in 2015. Firms employing fewer than 20 employees experienced the largest gains, adding 1.1 million net jobs. The smallest gains were in firms employing 100 to 499 employees, which added 387,874 net jobs.
  • Income and Finance
    • The median income for individuals self-employed at their own incorporated businesses was $50,347 in 2016. For individuals self-employed at their own unincorporated firms, this figure was $23,060.
  • International Trade
    • A total of 294,834 companies exported goods from the United States in 2015. Of these, 287,835, or 97.6%, were small firms; they generated 32.9% of the United States’s $1.3 trillion in total exports.

Entrepreneurship is "cool," not because you can get rich quick, but because you can live your dream and passion through your own hard work. Because you can build something great the world would otherwise not have without your efforts. Because you can build wealth, rather than make someone else wealthy. Because small businesses are the driving force of the economy.
