Breakfast Burrito With Eggs, Sausages, Bell Peppers, Onions, Cheese, and Salsa

This is my take on a breakfast burrito with scrambled eggs, breakfast sausages, chopped and stir-fried bell peppers and onions, melted Mexican 4-cheese blend, and medium-hot salsa.

Ingredients

The ingredient amounts all depend on the amount of breakfast burritos that you are cooking.

Scrambled Eggs

  • 5 Eggs
  • Milk

Breakfast Sausages

  • 4 Breakfast Sausage Patties

Onions and Peppers

  • 3 Bell Peppers
    • 1 Green Bell Pepper
    • 1 Red Bell Pepper
    • 1 Yellow Bell Pepper
  • 1 Large Onion

Tortillas

  • Mexican Soft Flower Tortillas

Seasoning

  • Garlic Powder
  • Olive oil
  • Parsley Flakes
  • Salt

Toppings

  • Mexican 4-Cheese Blend (Shredded Cheese)
  • Salsa
Recipe

Eggs

  1. Crack 5 eggs and pour them into a bowl.
  2. Beat the eggs with a whisk until the egg white was evenly mixed with the yolk.
    • If the eggs are not evenly mixed, the scrambled eggs will be spotted with egg whites.
  3. Add milk to the egg mix and cook the scrambled eggs by stirring the cooked parts towards the center repeatedly on medium-low heat.
  4. Add parsley flakes as you cook the scrambled eggs.
    • You can add any variety of your choice seasoning at this point.
    • My preference is salt and garlic powder.

Breakfast Sausages

  1. Cook 4 breakfast sausage patties on medium-low heat.
    • You can use any choice meats, such as small pieces or strips of chicken for example.
  2. Cut the sausage patties into small pieces using a spatula and a wooden spoon.

Onions and Peppers

  1. Stir-fry onions and green, red, and yellow bell peppers in a small pan on medium-low heat.

Tortillas

  1. Put a small amount of olive oil in a small pan, on low heat.
  2. Cover a Mexican soft flower tortilla with the olive oil on both sides.
  3. Put the Mexican 4-cheese blend on one side and scrambled eggs and breakfast sausage pieces, stir-fried bell peppers, and onions on the other half of the tortilla.
  4. Let the shredded cheese melt just a little bit.

Salsa

  1. Put the salsa on the side and add it to the breakfast burrito(s) as needed.

I cracked 5 eggs and poured them into a bowl.

I let the shredded cheese melt just a little bit.

I prefer to have the salsa on the side so that I can add to the breakfast burrito as I eat it. This way I won't add too much salsa to overwhelm the flavors of the breakfast burrito.

I kept the extra portions in case I want to cook another tortilla or save them for the next day.

This is a very delicious breakfast. In hindsight, I would have put less ingredient portions into each burrito to make it easier to fold the burrito.
